Cut the beef into long strips, add 1 spoon of baking soda, knead and then wash clean, dry the water, add scallion and ginger, squeeze juice, add 1 spoon each of oyster sauce, light soy sauce, dark soy sauce, black pepper powder, starch, and oil, add half an egg white, mix well and marinate for 20 minutes.

Heat the wok and add the beef, stir-fry over high heat, remove immediately when color changes.

Keep the base oil, first stir-fry garlic cloves until fragrant, then add the cut onion, green pepper and red pepper strips, stir-fry over high heat.

Add 1 spoon of black pepper powder.

Add the beef and stir-fry, add 1 spoon of oyster sauce, a little chicken bouillon and white sugar, appropriate amount of starch water, stir-fry evenly.

Stir-fry evenly and it's ready to serve.
Don't stir-fry too long as it will become tough.

- If you are worried about the beef becoming tough when stir-fried, you can slice it thinly and marinate it. This way, it will not easily become overcooked.
