Put pork ribs in cold water, add green onions and ginger, one small spoon of cooking wine, skim off blood foam, cook for 3 minutes, remove and drain water.

Pour a little oil in the pan, add a few small pieces of rock sugar, slowly stir-fry on low heat until jujube red color.

Pour in the pork ribs, quickly stir-fry evenly to color.

Add several ginger slices, 2 star anise, 2 bay leaves, 2 tablespoons light soy sauce, half tablespoon dark soy sauce, one tablespoon oyster sauce, stir-fry evenly again.

Pour in boiling water to cover the pork ribs, cover the lid, braise on medium-low heat for 45 minutes.

Finally reduce sauce on high heat, sprinkle with white sesame.

- Choose this type of spare ribs for the pork ribs; the meat is tender and fresh. If you don't know how to caramelize sugar, you can skip it and just add a few pieces of rock sugar. However, caramelizing the sugar will make the color more attractive.
