Make 3 cuts on each side with a knife.

Put appropriate amount of cold water in the pan (enough cold water to cover the chicken wings), put the cut chicken wings in cold water.

Add appropriate amount of ginger strips and two tablespoons of cooking wine.

Bring to a boil on high heat until there's foam on the surface.

Skim off the foam.

Remove and rinse with cold water.

Drain and set aside.

Preheat a flat pan, add a little oil and spread evenly.

Add chicken wings to the pan and pan-fry on low heat.

Add appropriate amount of ginger strips.

Pan-fry until both sides are slightly golden brown.

Add 2 tablespoons of light soy sauce.

1 tablespoon of oyster sauce.

A little salt.

Stir-fry evenly to color.

Cover the pan and simmer on medium heat for 15-20 minutes.

Remember to open the lid and flip during cooking.

Turn to high heat to reduce sauce until thick, then serve.

Plate and sprinkle with sesame.

- Making several cuts on the chicken wings helps them absorb more flavor.
- Adding ginger and cooking wine when boiling is to remove the fishy smell.
- Remember to drain the water from the boiled chicken wings, otherwise they will splatter oil when frying.
- If you don't like sweet and greasy food, you can use sugar-free cola, which will make the Coca-Cola chicken wings delicious without being greasy.
- When reducing the sauce at the end, stir frequently, otherwise it will easily burn.
