Instructions

STEP 1

Wash the potato clean and cut into strips, the thinner the better.

Soak the cut potato strips in clean water and wash three times.

Remove excess starch, drain the water and set aside.

Cut the scallion, garlic, and dried chili, cut green pepper and red pepper into strips.

Heat oil in a small wok and stir-fry scallion and dried chili until fragrant.

Add green pepper and red pepper and stir-fry.

Add potato strips and stir-fry until color changes.
