Ingredients

Glutinous Rice
80g
Rice
50g
Soy Milk
1000ml
Water
500ml
Chinese Yam
200g
Rock Sugar

Goji Berries
as needed

Instructions

STEP 1

Mix glutinous rice and rice, wash and soak in clean water for more than 2 hours.

STEP 2

Wash Chinese yam with skin, steam in steamer for 10 minutes. After steaming, let cool then peel the skin with a peeler.

Mash half of the Chinese yam into paste, or put in a blender with some water to make juice. Cut the other half into cubes, size as you like, if you like texture you can cut them slightly larger.

STEP 3

Boil soy milk mixed with water, add the soaked rice, bring to a boil then turn off heat, cover and steam for 15 minutes. After time is up, turn on heat and use a spoon to break up the rice, bring to a boil again then turn off heat, cover and steam for 15 minutes. After time is up, turn on heat and bring to a boil again, add the Chinese yam paste. Use a spoon to stir constantly to avoid sticking to the pot.

Cook for about 10 more minutes, then you can add rock sugar and Chinese yam cubes, cook until the rock sugar melts then turn off heat.

Tip: You can wash and soak goji berries in advance to soften them, just garnish, it's fine not to add them. Before cooking the soaked rice, you can crush the rice with your hands, this makes it easier to cook.
