First peel the pumpkin, cut into segments, cut into thin long strips.

Boil water in the pan, add one tablespoon of salt when water boils, put pumpkin in boiling water for 10 seconds, remove.

Then put the blanched pumpkin in cold water to cool, remove.

Then coat with starch, let the pumpkin surface coat evenly with starch. Spray a layer of water, then sprinkle some more starch.
Repeat two or three times.

Put oil in the pan, when 50% hot, add pumpkin strips, fry until surface is golden brown.

Add a little oil to the pan, add salted egg yolks, stir-fry until foamy.

Pour in pumpkin and stir-fry then serve.
