Cut pork into strips, separate fat and lean meat.

Slice green chili.

Prepare side ingredients, ginger, garlic and black bean sauce.

Heat the pan, no need to add oil, pour in green chili and dry-fry for two or three minutes.

Heat the pan again, still no need to add oil, render lard from the fatty meat.

When fatty meat starts to char, add lean meat and stir-fry evenly, high heat throughout.

After lean meat is cooked, add black bean sauce, garlic slices, ginger slices and stir-fry until fragrant, after aroma comes out, add one tablespoon light soy sauce, half tablespoon dark soy sauce, one tablespoon oyster sauce, one tablespoon cooking wine and stir-fry evenly.

Add the previously dry-fried chili, stir-fry on high heat for one or two minutes then serve.
