Wash the mushrooms clean and drain water.

Cut mushrooms into 3mm thick slices.

Take the fatty part of pork shoulder and stir-fry in the pan until volume decreases.
The rendered fat is very good for mushrooms, enhances texture, improves freshness and aroma.

Add minced ginger and minced garlic and stir-fry until fragrant, pour in meat slices mixed with starch and light soy sauce and stir-fry.

When meat slices are set and slightly change color, add mushroom slices and stir-fry.

When mushrooms start to release juice, sprinkle light soy sauce and salt, stir-fry for about 1 minute.
Mushrooms themselves are very fresh.

Thicken with water starch, add a handful of chopped green onions before serving.
Let the sauce better coat the mushrooms.
