Instructions

STEP 1

For delicious wonton noodles, the soup base is very important. Choose lean pork, blanched pork bones, chicken pieces, dried shrimp, dried whole shrimp, a little shrimp roe powder, and crushed dried flatfish that has been roasted, put all these ingredients in a pot, add water and bring to a boil on high heat, then reduce to low heat and simmer for two to three hours.

Try to keep the soup base clear.

First prepare the meat filling, put ground pork with some fat, chopped yellow chives, corn starch, salt, sugar, light soy sauce, cooking wine, and chicken powder in a bowl, stir in the same direction with chopsticks until well mixed, until it becomes sticky is best.

Besides ground meat, shrimp is also an important part of the filling, preferably sea shrimp for a more refreshing texture.

Next wrap the wontons, place the wonton wrapper in your palm, put shrimp and meat filling on it, dip your finger in water and dot twice along the filling, pick up and fold in half, then use the other hand's thumb and index finger to pinch and seal, forming a phoenix tail shape.

The wontons are wrapped.

Then cook the wontons, when water boils, add wontons first, after two or three minutes, when the wontons float to the surface, they can be removed.

First shake the noodles to separate them, cook for one minute, when about 60-70% cooked, remove and rinse in ice water, then put back in the pot to reheat for about ten seconds.

The noodles are cooked.

Put a little lard at the bottom of the bowl, add noodles and wontons, sprinkle some yellow chive segments and a little shrimp roe on the noodles.
